This traditional holiday treat comes from an old Colonial recipe: a hole was cut in the top of a pumpkin, the seeds were removed, and the cavity was filled with milk, spices, and honey. The pumpkin was then baked. This eventually evolved into baking the mix into a pie. The spices used then--nutmeg, cinnamon, and vanilla--are still used today.
